According to the technical characteristics of the chemical modification process, the state of the product after the reaction is also different. We use two different types of roller dryers in practical applications: single-roller dryers and double-roller dryers. In recent years, we have conducted continuous research and exploration in the production method of roller modified composite modified starch and how to improve product quality, and summed up some experiences and experiences.

1.1 Production operation

1.1.1 In general, chemically modified starch milk is washed, concentrated and dehydrated before rehydration, instead of chemically degraded slurry going directly to the drum for drying. Because the washed starch can be dehydrated, it can become a more pure product, so as to obtain high quality compound modified starch.

1.1.2 According to different product requirements, carefully adjust the operating parameters of the roller drying.

The control of pressure, temperature and rotation speed is generally optimized and adjusted according to the moisture content and color of the final product and the ease of gelatinization. At present, there are three conventional products: φ500, φ1000, and φ1500. The speed adjustment range is 0~6r/min and the working pressure is ≤0.8Mpa. Due to adopting electromagnetic speed regulation and frequency conversion speed regulation, it can better meet the production operation of compound modified starch. It is worth pointing out that for high-viscosity products, the electromagnetic speed regulation method should generally be selected, and its overload capacity is strong enough to solve the problem of large starting resistance.

1.2 Product Quality Control

It is not difficult to see from the production process of compound modified starch that there are many factors that affect product quality, both the internal factors of the quality of the production raw materials, and the external factors that control the process parameters. Under the premise of ensuring the quality of production raw materials, the quality control of products mainly focuses on the following aspects.

1.2.1 Strengthen the follow-up inspection, grasp the reaction progress and gelatinization effect in time, and strive to ensure the stability of product quality;

2 Application Prospects of Compound Modified Starch

Compound modified starch is widely used for its excellent performance (cold water soluble, easy to transport, energy saving and environmental protection). Although the current application field is very wide, the volume of a single product is not large, and it is necessary for the entire industry to work together to promote the application. The current main application areas include:

At present, powder (grain) foods are used for mixed packaging, and the end user directly flushs water for drinking. This is also the application method in solid seasonings.

2.2. In the forming process of cakes, cakes, and sheet-like foods, the composite modified starch is used as a curing excipient, swelling agent, and improver.
